Gardein beefless tips become beefless stew

I don't use fake meat products much in my cooking; I prefer to use beans, lentils and whole grains, but yesterday I pulled out some gardein beefless tips and made beefless stew.    Here is how it looked in the pan:





Recipe:

1 onion, chopped
2-3 garlic cloves, minced
3 celery stalks, sliced diagonally
4 carrots, sliced diagonally
1 small can tomatoes, broken up
1 227g pkg. mushrooms, sliced
1.5 tsp. Epicure Selections Malaysian seasonings

I served it over cooked brown and wild rice, but it would have been great over mashed white or sweet potatoes.

Vegan cheesy macaroni goodness

OMG WOW!!  That is all I have to say!  Well, no it's not, because I like to talk and cannot limit myself to just those few words. :-)  This was fantastic!  My kids loved it!  One of the things my children have struggled the most with since our transition from vegetarian to vegan is giving up cheese.  I make a lion's share of meals using nutritional yeast for the cheesy taste and to get some extra B12, but this recipe uses a scant 1/3 cup in the entire sauce.  Most of the creamy flavour comes from the cooked squash.  (I didn't have enough, so I steamed some yams and substituted with them.)

Anyway, this recipe entered my archives today as a winner and I'm sure it won't be long before I put on a repeat performance.  I have asked the author to provide nutritional information and once I have that, I will post it.

Sandwiches with cashew cheese spread

I altered the following recipe by using fresh dill and parsley instead of basil.  The result is very green and very dilly, but very delicious.  This makes an excellent sandwich spread and is fantastic with sprouts, lettuce and cucumbers.

Green smoothie goodness





One beautiful green smoothie, what a glorious way to start the day.  You will need:

1 ripe banana
2 cups frozen fruit (I used mango, kiwi and pineapple)
1 cup ice
3 cups water
2 cups packed baby spinach leaves
1 tbsp. hemp hearts

A quick whir in the blender and you're all set!

Daily posts?

I don't know if I can come here to post every day, but now that I have a new client I'm inspired to make her some really good food.  Today I'm dropping off two meals, one that I like to call a Jeff Novick special.  Here is his picture of the creation:

It's basically potatoes toppped with cooked vegetables and tahini sauce.  The recipe is on the link above.  It's so delicious and so fresh tasting.  I love this meal and I will share it today with Tracy.

The second meal I'm bringing her is curried tofu and mixed Asian vegetables overtop of quinoa cooked in low sodium vegetable bouillon.  I will post the picture later.

Gorgeous soup/stew that I have to share!

Wow, it's been a long time since I posted.  When summer ended I lost all but one of my clients, so I didn't feel motivated to come here and share recipes.

First post - thanks for coming out!

I started a vegetarian blog a few months ago, but lost the file when I changed email addresses, so I'm starting over now.
